High in the misty hills of southern Huila, the Sidra variety thrives under a careful balance of sunlight and shade. At El Diviso, each cherry is hand-picked at peak ripeness, a process that demands both patience and precision. Nestor Lasso and his family have spent years refining their craft—fermenting and drying each lot with sensitivity to the day’s climate, ensuring every step preserves the variety’s delicate floral and fruit notes. What begins as a humble cherry on a branch becomes a layered expression of place, people, and perseverance.
When the roasted beans of El Diviso Sidra finally reach our roastery, the journey comes full circle. Here, careful roasting draws out the coffee’s natural sweetness and refined acidity—flavors of red fruit, honey, and gentle florals that bloom with each brew. Every cup tells the story of collaboration between producer and roaster, where passion meets precision. It’s a coffee that connects us to its origin, inviting you to taste the altitude, the care, and the generations of craft that make El Diviso truly special.
