Guadalupe, Huila hosts El Descanso, a 7-hectare farm led by second-generation grower Jose Heider Contreras. At 1,600 meters, 20,000 Castillo and Bourbon Rosado trees ripen with balance and depth. Cherries are handpicked, dry-fermented for 36 hours, then washed and dried slowly in a marquesina. The result is a sweet, complex cup that reflects both Huila’s land and its farmers.
