The natural process is the oldest method of processing coffee, but Jose feels it has relinquished its congeniality crown to washed coffees, for more control over consistency. Despite the toil and time that natural processing takes, Jose finds worth and fondness for the processing method, but his reasons go beyond just coffee to embrace the environment. “When the risks and labour can be accounted for, dry processing is a great way forward when it comes to sustainable coffee production.”
